BBQ Pulled Chicken

Mmmm...  Mmmm...  Mmmm


I love taking a zero point condiment and making it into a luscious low point dinner. This makes 10 servings. Good to put in small containers to freeze.

1 large package boneless, skinless chicken breasts. There were 8 large breasts.

Mix
1 bottle G. Hughes BBQ sauce
1/2 cup Hoisin sauce
2 TBS cup light sodium soy sauce
Ginger
Garlic

Put in slow cooker
Cook 7 hrs in low
Take two forks and shred chicken

Leave cover off and let sauce reduce.

Use in wraps, buns, or just plain.

Squash and Vegetable Soup

Leftovers! I had roasted squash, cooked chicken, frozen corn and a bag of frozen mixed vegetables. There are at least 4 servings in the soup kettle, but it depends on how many leftover vegetables and chicken broth you add.

This is delicious!


In a soup kettle
Smash leftover cooked squash
Add can of  Campbell's Healthy Request condensed cream of chicken soup
Can of drained pinto beans
Add a bag of frozen vegetables
Dice cooked chicken, add
Add Chicken broth
Add lots of baby spinach

Add salt, pepper, Mrs. Dash, curry

The only points - 5 from the can of soup. So divide that by the amount of servings you end up with.

Chicken Butternut Stew

Dinner tonight was delicious. Leftovers are my favorite starting point for creating a new recipe.

2 cups cooked chicken, cubed (0)
2 cups cooked butternut squash (0)
1 can Healthy Request Cream of Chicken Soup (5)
1 can Pinto beans (0)
1 cup zucchini, chopped (0)
1/2 cup celery, chopped (0)
1/2 cup carrots, chopped (0)
Half a yellow onion, chopped (0)

In a slow cooker, mash squash, mix in condensed soup. Saute chopped vegetables in Pam sprayed pan. Salt, pepper, lots of sage.

Add chicken, vegetables and beans to squash mixture.

Cook on low 2-3 hours.

3 large servings - 2 Freestyle Points each

Chicken with Balsamic Tomatoes




Chicken with Balsamic Tomatoes
Serves 6 - 4 Smart Points each

6 boneless skinless chicken breasts
1 Tbs Olive Oil
1 1/2 Tbs White Wine Vinegar
1 tsp Italian Seasoning
15 garlic cloves
1 tsp crushed red pepper flakes
6 cups fresh cherry tomatoes cut in half (I used heirloom)
3 Tbs balsamic vinegar
1 Tbs regular butter
1 Tbs honey
1 Tbs basil
1 cup onions, chopped
1 tsp Thyme
3 wedges Laughing Cow Cheese
2 cups shredded fat free Mozzarella
6 Tbs Trader Joe's Bruschetta Sauce

Preheat the oven to 425

In Ziploc bag add 6 cloves crushed garlic, olive oil, white wine vinegar, pepper flakes, salt, pepper, Mrs. Dash, Italian Seasoning.  Mix together and split chicken breasts and spread 1 Tbs Trader Joe's Bruschetta and 1/2 wedge of Laughing Cow cheese, roll up and add to ziploc bag. 
Marinate for a couple hours or overnight.

After chicken is done marinating.  In the pan you are going to bake the chicken in, add the tomatoes and push the chicken breasts into the center of the tomatoes.

Saute onions in Pam sprayed pan, add remaining crushed garlic, balsamic vinegar, thyme, butter, honey.Turn off heat.  Add basil.  Pour over tomatoes and chicken.

Bake uncovered for 25-55 minutes - it depends if you have assembled this dish before and had it in the refrigerator or putting it into the oven warm.  I always check the temperature.  It should be close to 165).  Cover with mozzarella.  Spray with Pam.  Broil on high for 5 minutes.

There will be lots of tomato gravy.  Delicious over rice.  Served this with 2-ingredient dough made into Naan bread (adding chives and garlic).

Thai Chicken and Vegetables

  • Sauce
  • 1/4 cup reduced sodium soy sauce
  • 1/4 cup water
  • 1/4 cup Hoisin Sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1/4 cup Iron Chef Asian Garlic Sauce
  • 2 tbsp cornstarch

Make sauce - add ingredients. Heat on low until thick. Can make ahead and put in refrigerator.

Chicken
  • 6 boneless skinless chicken breast, chopped 
  • Season with Mrs. Dash, garlic, soy sauce, Hoisin sauce, salt and pepper. Cook and then refrigerate overnight.

  • Cookie Sheet Prep for Dinner - rinse and cut vegetables into bite size pieces
  • 1 bunch bok choy 
  • Carrots
  • Snap peas
  • Tomatoes
  • Red and orange peppers
  • 1 cup cashews

Place on two foil wrapped cookie sheets.  Put all vegetables around the outside of the pan and the chicken in the middle.  Spoon sauce over all.

Bake 400° for 25 minutes. Makes 12 servings. 5 Smart Points each.

Chicken and Broccoli Casserole



Serves 12
4 points per serving 

2 ingredient breadsticks
1 1/4 cup Self Rising Flour
1 1/4 cups FF Greek Yogurt 

Casserole 
9 chicken breasts
3 cans Campbell's Healthy Request Cream of Chicken Condensed Soup
2 cups FF Greek Yogurt 
Juice of one lemon
6 slices ultra thin sharp cheddar cheese
1 TBS Curry with 1 tsp each cumin, coriander, salt, pepper, Mrs. Dash
2 TBS butter
4 cups broccoli 


  • Mix flour and 1 1/4 cup yogurt.  Knead in bowl. Roll into 12 breadsticks. Bake. Set aside.
  • Cut chicken into bite size pieces and brown in Pam sprayed pan. 
  • Cook broccoli in microwave. Trim off large stems. Cut large heads in two.
  • Mix condensed soup and rest of yogurt and lemon juice, cheese with rest of Curry, coriander, cumin, salt, pepper and Mrs. Dash. Add cooked chicken, cooked broccoli. Mix well. Put into 6 metal foil loaf pans (2 servings in each) sprayed with Pam. 
  • Cut breadsticks into cubes. Brown in Pam sprayed pan and melted butter. Top each casserole. Cover with foil and refrigerate or  freeze.
Bake 350° oven for 1/2 - 1 hour.

Chicken Stroganoff



Always looking for ways to used cooked chicken. Came up with a Chicken Stroganoff recipe for 6 Freestyle points per serving.

This recipe serves 2.

3/4 cup Fat Free Gravy
1 cup Fat Free Greek Yogurt
1/4 cup White Wine
3/4 cup Fat Free Cheddar Cheese
Mrs. Dash, Salt, Pepper, Minced Garlic, Minced Italian Herbs
Heat on low

Cook 3 cups Carba Nada Noodles in salted water, drain

Add to sauce
8 oz cooked chicken cubed or shredded
Cooked noodles

Serve over
Zucchini sauted with Chili Lime Seasoning

Thai Chicken and Squash



Thai Chicken and Squash

Pat and I both liked this.

4 servings - 8 SP each

Cube a butternut Squash 
Line cookie sheet with foil, spray with Pam
Roast 400 until done 45 - 60 min.

Chicken - I used slow cooked that I had frozen
Warm up 12 oz chicken with 2 tsp Tumeric 

Microwave 2 containers of prepared rice - serves 4

Place rice, squash, chicken in thirds in four flat bowls. Drizzle 3 TBS Peanut Sauce over each.

Peanut Sauce - makes 8 servings of 3 TBS each - can refrigerate up to a week
1/2 cup PB2
Make a thick paste with water
2 TBS Red Curry Paste
2 TBS Apple Cider Vinegar
3/4 cup canned coconut milk
1 tsp minced ginger
1 tsp sugar



Whisk together and drizzle over food. Refrigerate leftover sauce.

Back Together

Bill and Amy and Jim and Jan came to dinner tonight. We haven't been all together in three weeks. It was so good to have us all talking and laughing.

Made chicken cacciatore for dinner.



Homemade sauce with fresh tomatoes.

I cooked chicken yesterday in chicken broth and put in refrigerator. Today I cut the cooked chicken into cubes, shook them in a bag of seasoned flour. Melted one Tablespoon of butter (I used to use a whole stick) and sprayed Pam. Browned the chicken and added it to the sauce. Added diced onions, celery and green peppers to the same pan I browned the chicken in.  When cooked added to sauce.

The zoodles I spiralized this afternoon and two hours before I needed them I put them in a 400 degree oven and after a few minutes I turned off the oven and left the zoodles in the closed oven.

Added the zoodles to the sauce. It was delicious.

Miso Soup

Oh yum....



I bought frozen Chicken Wonton, Everything but the bagel seasoning, and Miso/ginger broth at Trader Joe's. This is the second time I've made soup. It just keeps getting better.

This is today's version:
Makes 2 servings
3 WW SP

1/2 box Miso/ginger broth
7 large shrimp
8 frozen Chicken Wontons
2 cups zucchini or summer squash zoodles
1 1/2 cups power salad blend
Squeezes of garlic, ginger, parsley tubes
Everything but the bagel seasoning
Salt, pepper, Mrs. Dash, red pepper flakes
Soy sauce

Heat the broth in 4 qt pan
Saute everything else when hot add several shakes of soy sauce.

Add everything to broth.
