Parfaits
The best purchase for this WW journey was 4 oz glass parfait cups. It gives us just the right amount for a sweet treat.
I love the little cookies from Trader Joe's, but you can switch them out for 1 point worth of cookie crumbles of any kind of cookie.
The combinations are endless, but these two are my favorites.

Strawberry Rhubarb Crisp
Preheat the oven to 350°
4 lbs Strawberries
4 lbs Rhubarb
1 tsp Cinnamon
1/2 tsp salt
1 TBS Truvia Brown Sugar
2 TBS White Sugar
1 TBS Cornstarch
Juice of 2 lemons
Rinse, hull and slice strawberries
Rinse and cut Rhubarb
Simmer fruit, lemon juice, Truvia brown sugar and white sugar and cinnamon
When boiling add cornstarch to a little water when dissolved add to fruit. Cook a few minutes.
Pour into large casserole dish.
In separate bowl mix just til crumbly
1 dry Pillsbury sugar free cake mix
1 cup oats
1 /2 cup unsweetened applesauce
1 egg
2 tsp cinnamon
Sprinkle crumble on top of fruit
Bake for 45-60 minutes - when lightly browned
Serve with FF Reddi Whip

Strawberry Rhubarb Cobbler
Kay and Jerry gave us Rhubarb. A search for recipes found a hot strawberry shortcake that I revised. It's delicious.
7 servings
1 Smartpoint
2 lbs. fresh or frozen strawberries
2 cups rhubarb cut in small pieces
7 tsp Truvia
1 tbsp cornstarch
Juice of one lemon
3/4 cup self-rising flour
A little less than 3/4 cup Fat Free Greek yogurt
1 tsp cinnamon
1/2 cup unsweetened applesauce
Preheat the oven to 400°
Put strawberries, rhubarb, 2 TBS Truvia, and lemon juice into saucepan. Bring to a simmer over medium heat. When boiling mix cornstarch with a little water and add to fruit. Simmer to reduce. Pour into casserole dish.
Combine the flour, yogurt and applesauce in a mixing bowl and mix until just combined. Use a small cookie scoop to add the dough to the casserole dish with the strawberry mixture.
Combine the remaining 1 teaspoon of Truvia and cinnamon. Sprinkle the mixture over the biscuits. Bake, uncovered, for 20 minutes, or until the biscuits are lightly browned.
Remove the pan from the oven and let it stand for at least 5 minutes before serving.

Banana Pumpkin Muffins
Anything in the Refrigerator Muffins
These are delicious. Just right with a salad for lunch. 1 Freestyle pt for one. 3 pts for two.
In my book, "Enough Kindness to Fill an Empty Heart" Rebecca calls this the Anything in the Refrigerator Muffin. I love baking this muffin. I've used many different combinations:
zucchini and carrots
zucchini and black cherries
carrots and applesauce
carrots and blueberries
peaches and blueberries
Sometimes I only add one egg, depending on how wet the ingredients are when I mix them all together. Sometimes I bake them for 60 minutes instead of 50 and even leave them in the oven when they are done for awhile. This is a very forgiving recipe.
When they are cool I turn them upside down on a cooling rack until the bottom dries. Then I put them in a Rubbermaid container with paper towel on the bottom and in between layers. I store them in the refrigerator and we have one or two for a night snack warmed up with Reddi Whip. It makes for a delicious snack. 1 muffin is 1 point - 2 muffins are 3 points.

Cheesecake
This is really good cheesecake.
Preheat oven to 350°
Spray pie dish with Pam
3 cups FF Greek Yogurt (I use Fage because it is so thick and creamy)
3 eggs
1 TBS Vanilla
1 TBS Truvia or other sweetener
1 small pkg (3.4 oz) Jello Pudding Cheesecake flavor
Optional 1/4 cup PB2
Note: For chocolate cheesecake change PB2 to chocolate PB2, 1/2 chocolate pudding and 1/2 cheesecake pudding mix, and add 1/4 c Hershey cocoa.
Mix all Ingredients. Pour into pie dish. Smooth out the top to be even. Bake 30 minutes. Turn off oven and let cool in unopened oven. Cover with plastic or press and seal and refrigerate several hours or overnight. We like it with fresh blueberries.
Added Cranberry Smash - still 0 Freestyle Smartpoints
In a saucepan combine:
1 bag fresh cranberries
1/2 cup water
1 small box orange sugar free Jello
Bring to boil, turn down heat and simmer 7 minutes. Cool.
Drain and rinse 15 oz crushed pineapple. Add to cooled cranberry sauce.
Fill small glass 3/4 full of cooled cheesecake, top with Cranberry Smash. Mix loosely. Top with fat free Reddi Whip.

Mudhustler Brownies
Here are Mudhustler brownie recipe and my version. Only differences are I use real brown sugar, add zucchini and make in silicone cupcake pans.
Mix together:
1/2 cup flour
1 1/2 scoops Quest vanilla
1 TBS Baking Powder
1/4 cup Hershey's special dark cocoa
3 TBS brown sugar
1 TBS Espresso Powder
Add:
2 eggs
1 TBS vanilla
15 oz pumpkin
1-2 cups shredded zucchini,
(Water squeezed out)
Scoop into Pam sprayed cupcake pans -recipe makes 12.
Bake 350° for 25 minutes. Turn off oven and leave in oven with door closed. Store in refrigerator.
Serve with FF Reddi Whip and raspberries.
1 for 1 pts or 2 for 3 pts

Cream Cheese Parfait
A Small Delicious Cheesecake Parfait - 3 pts
This recipe makes 12 small parfaits. They are delicious and our non Weight Watcher company loved them too. Just the right size to satisfy the craving for something sweet.
8 oz Fat Free Cream Cheese
1 cup Fat Free Whipped Topping
1/4 cup Powdered Sugar
1 single serving container FF Greek Yogurt
Blueberries, Raspberries, and Blackberries
36 Trader Joe's Crispy Crunchy Chocolate Chip Cookies (These are tiny.)
With hand mixer blend cream cheese, yogurt, powdered sugar and whipped topping.
Crush 3 cookies into the bottom of each parfait glass. Put a dollop of cream mixture on top. Add a layer of fruit. Top with another small dollop of cream mixture.

Peanut Butter, Chocolate & Banana Oh My
Trying a new dessert.
3 Bananas
1/4 cup PB2
1/4 cup Cocoa
1/2 cup Fiber One
Combine bananas, PB2, and cocoa until smooth with hand mixer. Fold in Fiber One.
Fill into 12 mini cupcakes. Freeze.
1 = 0 pts
2 = 1 pt
Freeze but take out of freezer for 10 minutes before eating.

Peanut Butter Parfait
I never thought in a million years that I would use powdered peanut butter... good thing I didn't bet on it!
This was delicious
3 Bananas sliced
1 8oz FF Cool Whip
6 TBS PB2
2 TBS Unsweetened Cocoa
Mix Cool Whip with PB2 and cocoa. Layer this with sliced bananas.
