Cranberry Surprise


We went to the Kilted Cook for lunch in December and we had a delicious roasted vegetable dish. I've been looking for cranberries to make it every time we went to the store. I knew fresh would be hard to find after the holidays but thought I would find frozen. Finally found them. I guessed at the herbs - turned out pretty good. Served it with salmon one night and chicken the next. 

The sweet roasted vegetables and the tart cranberries are a delicious combination.




Carrots
Turnips
Onions
Cranberries

Olive oil and Pam
Salt
Pepper
Sage
Rosemary
Mrs. Dash

Mix and spread on cookie sheet

Stir after a half hour
Roast until it looks and smells good
Depends how small you chop veggies

The only points is for olive oil so it depends on how much you use.

Mexican Street Corn Salad

 Serve in bowls, top with Trader Joe's Chili Lime


Or serve on slices of peppers


Serves 6 - 0 Freestyle Points

6 corn on cob, roasted
Take kernals off cob

4 green onions, sliced
1/2 cup parsley, chopped

Mix
1 cup Fage FF Greek yogurt
2 TBS Walden Farm's Ranch dressing
2 TBS lime juice
Trader Joe's Chili Lime Seasoning

Add to corn
3 TBS crumbled goat cheese

Cabbage Slaw



Head, about 2 1/2 cups red cabbage, shredded
Head, about 2 1/2 cups green cabbage, shredded
2 Granny Smith apples, spiralized
2 cups zucchini, spiralized

Dressing
2 TBS olive oil
3 TBS orange juice
2 TBS Golden or white balsamic vinegar
*** If you use reg balsamic vinegar like I did your apples turn brown - taste fine but look nasty!***
1 tsp Poppy Seeds
1 tsp honey
Salt and pepper

This is 1 delicious Freestyle Point

Yummy Polenta

I was starving when we got home from the gym. So I made polenta.... Not from scratch... I use the tube. Slice it up. Saute with a little olive oil. Sprinkle with salt, pepper, garlic powder, oregano, and Mrs. Dash. Turn slices over.

Rinse a can of black beans. Add to pan. Add a can of diced tomatoes. Top with 1/2 cup fat free mozzarella and 1/2 cup reduced Mexican blend. Cover pan.

Yum.


There are 5 servings in the skillet. 3 Freestyle points for each serving.

Lentil Coconut Soup


This was delicious. Will make again. Makes 4 - 5 Freestyle Point servings (2 ladles each).

1 Tbsp olive oil 
1/2 yellow onion
Garlic 
Ginger
2 tsp turmeric 
1 TBS Mrs. Dash
1/2 tsp salt
red pepper flakes
12 baby  carrots

Cook over medium heat until onions are soft and translucent. 

Add:
1/2 pkg Trader Joe's cooked Lentils
2-3 cups FF chicken broth
13.5 oz can Trader Joe's RF coconut milk
1 container cooked Minute Rice

Cook over low heat for 5 minutes. Add 1 container of Minute Rice. Take off heat and cover for 5 minutes.
